Chocolate and Pumpkin Cupcakes
Special Chocolate and Pumpkin Cupcakes with Chocolate Ganache
Makes one dozen regular size cupcakes and 20 mini cupcakes
For the Cakes:
Oven at 350
4 oz. dark chocolate chopped
1/4 c. light cream
3/4 c. flour
2 T. cocoa
1 t. baking powder
1 t. all spice
1/8 t. salt
1/4 c. oil
1/2 c. brown sugar
2 eggs
4 oz. grated pumpkin
For the Ganache
3 oz. dark chocolate chopped
1/3 c. light cream
For the cupcakes:
Melt chocolate and cream in double boiler over barely simmering water. Remove from heat and let cool. Combine flour, cocoa, baking powder, all spice and salt in small bowl. Combine oil, brown sugar and eggs in medium bowl. Stir in grated pumpkin. Add the mixed dry ingredients and the chocolate to the dry ingredients stirring well to combine.
Fill cups 3/4 full and bake for 20-25 min, 10-15 min for mini cakes.
For Ganache:
Melt chocolate and cream in double boiler over barely simmering water, stirring until smooth. Refrigerate until thickened, about 15 min. Spread layer of ganache over each cupcake and enjoy!
